SIDE DISH THAT WILL MAKE YOU GO LOCO

Today I am going to share with you my "Ana, when will you make your baked potatoes again?" recipe. It is very easy to make and it tastes divine. I usually make it with grilled chicken or turkey with cream/mushroom sauce, and it goes perfect with steak. What will you need?

- potatoes (regular or sweet)
- white onion (it must be white, because it gives the best flavour) 
- fresh carrots
- salt
- minced garlic
- minced onion
- black pepper
- dried parsley 
- olive oil 

Wash and cut your potatoes, onion and carrots. If you cut the carrots thinly, you will get slightly burned and browned bits. Because a lot of my friends love the burned flavour and pick only the brown carrots out of the baking tray, I usually cut half of the carrots thin, and other half medium - so there is a mix of everything for everyone. Put everything in a bowl and add salt, minced garlic, minced onion, oil and mix well. Preheat your oven on 200 degrees or 390 fahrenheit. Put all your ingredients in a baking tray and sprinkle with dried parsley and black pepper. Bake for 35 to 45 minutes - depends on what type of potatoes you have.
So, why is this recipe so special? While baking, white onion releases the sweetness into carrots and potatoes - the taste of sweetened potatoes and carrots is just perfect. I never saw any leftovers when I made this, even when it all cooled down people had fights over who will take the last bite.

Danes ti bom razkrila svoj največkrat "ukraden" / "Ana, kdaj boš spet naredila tisti tvoj krompirček?"  recept. Priprava je sila enostavna, okus pa božanski. Jaz ga največkrat pripravim zraven pečenega piščanca, purana v naravni/ smetanovi/ omaki z gobami, super pa je tudi kot priloga k žaru. Kaj potrebuješ?

- krompir (navaden ali sladki, obe opciji sta super)
- bela čebula (nujno bela, saj pride najbolje do izraza)
- sveže korenje
- sol
- česen v prahu
- čebula v prahu
- poper
- sušen peteršilj
- olivno olje

Krompir olupi, nareži na manjše krhlje in dobro operi - da spereš čim več škroba. Čebulo in korenje prav tako olupi in nareži. Če korenje narežeš na tanjše kolobarje bo tekstura bolj hrustljava in "zažgana", zato jaz po navadi naredim mix - polovico narežem na srednje debele kolobarje, polovico pa na tanke, saj imajo nekateri zelo radi "zažgan" okus in s pekača izbirajo samo "rjavčke". Narezan krompir, korenje in čebulo dam v veliko plastično posodo, dodam olje, sol, česen v prahu, čebulo v prahu ter dobro premešam. Med tem časom segrejem pečico na 200 stopinj, vse sestavine stresem v pekač in po vrhu posujem poper ter sušen petršilj. Pečem med 35 in 45 minut, odvisno od sorte krompirja.
No, in zakaj je ta recept tako poseben? Čebula med pečenjem spusti sladkobo, ki se jo korenček in krompir navzameta - okus ki se pri tem razvije pa je božanski. Nikoli se mi še ni zgodilo da bi v pekaču kaj ostalo, še za mrzlega smo se skoraj stepli.

  1. Tole se pa bere božansko, prav danes delam nekaj podobnega, bo pa priloga k lososu :). Obvezno sem dodala čebulo, prav po tem ko sem brala tole, sicer nanjo pogosto pozabim, kar je škoda, ker res doda sladkobo :)

    1. K lososu pa še nisem probala, dobra ideja! :) Ja po navadi med hitenjem pozabimo na čebulo, ampak res spremeni celotno jed. Je vredno tistih pet minut ekstra! :)
