HEALTHY SUNDAY PANCAKES

Because Sunday breakfast comes after Saturday, which is my cheat meal day, I am usually still under the influence of 'not so good for you' food. That is why I decided to make my healthy version of pancakes for breakfast today. Protein pancakes with chocolate sauce, strawberries and coconut. Everything you will need:

USN diet fuel ultra lean nutrition shake, vanilla (for 10 pancakes you need 3 scoops, that is about 2,6 ounces of protein)
- almond milk (about 6,7 fluid ounces)
- water (about 1,7 fluid ounces)
- 2 eggs
- oats (1 cup)
- baking powder (1/4 of a cup)
- greek yoghurt 
- 100% cocoa powder
- fresh strawberries
- coconut flour
- coconut butter
- peanut butter (Meridian, Organic Peanut Butter Crunchy)

In a food processor mix together your protein, almond milk, water, eggs, baking powder and oats. Mix until you get a thick pancake mix. Melt the coconut butter in a smaller pan and make the pancakes. They have to be about 3 inches in diameter because we are making smaller - american pancakes. Wash and cut the strawberries and mix the greek yoghurt and cocoa powder together. That way you get a thick chocolate sauce. Now we have to assemble it. This is what I do - spread one small table spoon of peanut butter on the first pancake and put the chocolate sauce, strawberries and coconut flour on top. On each of the next pancakes, add just chocolate sauce and strawberries. You can use whatever fruit you like - bananas, blueberries, raspberries - and maple sirup is also a good idea!

Ker za soboto, ki je moj 'dan goljufanja' pride nedeljski zajtrk, jaz pa sem še vedno pod vplivom 'pregrešne hrane', sem si danes za zajtrk pripravila zdravo različico palačink. Proteinske palačinke s čokoladnim prelivom, jagodami in kokosom. Sestavine ki sem jih uporabila so:

- USN diet fuel ultra lean nutrition shake, vanilija (za 10 palačink potrebuješ 3 merice torej 75g proteinov)
- mandljevo mleko (2 dcl)
- voda (0,5 dcl)
- 2 jajci
- ovseni kosmiči (3 velike žlice)
- pecilni prašek (1 čajna žlička)
- grški jogurt
- 100% kakav v prahu
- sveže jagode
- kokosova moka
- kokosovo maslo
- arašidovo maslo (Meridian, Organic Peanut Butter Crunchy)

V mešalniku zmešaj proteine, mandljevo mleko, vodo, jajca, pecilni prašek in ovsene kosmiče. Mešaj dokler ne dobiš gladke kompaktne mase. V manjši ponvi stopi kokosovo maslo in speci palačinke. Premer ene palačinke naj bo približno 8 centimetrov, saj so to manjše - ameriške palačinke. Operi in nareži jagode, ter v posodi zmešaj grški jogurt ter kakav - dokler ne dobiš čokoladnega namaza. Vse kar preostane je sestavljanje. Jaz sem spodnjo palačinko namazala z žličko arašidovega masla, dodala čokoladni namaz, jagode in posula s kokosovo moko. Vsaka naslednja plast pa je bila sestavljena le s čokoladnega namaza in jagod. Uporabiš lahko katero koli sadje - banane, borovnice, maline, zraven pa super paše tudi javorjev sirup!
